I think I am over busy to remember to update the site more often. Still there is always my blog you can follow since it's easier to update than the site is sometimes.
Sariah turned 10 on December 30th. It still hasn't fully sunk in that she is now and forever will be in double digits. Well unless she lives to be 100, but with our family history on both sides, I am not holding my breath on it. Still I wouldn't mind if she did live to be 100!
We started a new family tradition this New Years by having a Puerto Rican dinner of Empanada's, rice and beans, and fried plantains. It's one of the kids favorites and it's close enough to Three Kings Day that we decided to combined both holidays into one day. Gives us something to look forward to every year now too.
The kids LOVE to help make the food too. Joe likes the help as well since he is the one that does the cooking. I prepare the Empanada mix and help cut up the plantains. Joe fries the empanadas and plantains while cooking the rice/ The kids fill and crimp all of the empanadas. It's a big family event whenever we do this. Next year we are thinking of adding to the menu.
Currently Joe's job is hanging in the balance since the person below him was "laid off" so if word comes down frm corporate for more layoffs Joe will be the next to go. This has us a tad scared and angry since the week before the company assure everyone in a meeting that lay offs would not happen as the company was doing okay.
In this economic climate being worried about losing a job as good as this one really puts stress on the family. Please pray for us that Joe does not end up next and that his company will continue to do well.
